The man behind Dandelyan, the best bar in the world, has just opened a new restaurant in Hoxton. The restaurant is a joint venture between Ryan Chetiyawardana (of Dandelyan fame) and Doug McMaster (of Brighton’s pioneering zero-waste restaurant Silo).
Called Cub, the restaurant is “its own ecosystem,” with ingredients grown on site. Of course the cocktail menu will be a big thing at Cub, and the restaurant plans to blur the boundaries between food and drink. Dishes include ‘buttered Mr Lyan Gin, precipitation of Lapsang Tannins, Ambergris, Cider’.
